Ses Escoles sits on the San Juan road in the middle of the island, in a building that was the local school until it became this. It is two things at once: a restaurant cooking Ibizan market food over charcoal, and an oleoteca selling the estate's own organic olive oil, Can Miquel Guasch.
The combination works because the oil is the house product rather than a gift-shop line, and it turns up in most of what the kitchen sends out.
The food
Grilled meat and fish over charcoal, island vegetables, and a menu that moves with the market rather than the season's marketing. It is unfussy cooking done carefully.
The shop at the front sells the oil, along with salt, preserves and local produce, and it is one of the better places on the island to buy something to take home.
When it is open
All year, which on Ibiza is worth saying twice. In winter it runs Tuesday to Sunday for lunch and dinner. It is closed on Mondays.
In July and August it serves dinner only, from the early evening. Turning up for lunch in high summer is the standard mistake.

It is a drive. There is no village attached, so this is a destination rather than a walk-out.
