Twelve seats, one sitting a night, and a dinner staged with projection and virtual reality rather than served at a table.

Sublimotion is a dinner for a dozen people in a room where the walls, the table and the ceiling are all screens, run by the Madrid chef Paco Roncero, who holds two Michelin stars. It is closer to a piece of theatre with a tasting menu inside it than to a restaurant, and it has been on Ibiza since 2014.

For the 2026 season it moved. It had been at the Hard Rock Hotel on Playa d'en Bossa for years; it now runs at BLESS Ibiza The Site, on the same stretch of coast, opening on 1 June. If you booked on the strength of an older page, that is the thing to check.

What happens

One sitting a night, twelve seats around a single table. The room changes through the meal: projection on every surface, scent, sound and temperature shifting between courses, and for 2026 a section using virtual reality headsets. Each course arrives with a scene built around it rather than an explanation.

It runs to several hours. There is a drinks pairing and there is a reception beforehand, which for the 2026 season is being run in collaboration with Tomorrowland at their store in Ibiza.

The food is the work of a two-star kitchen, which is worth saying because the staging tends to get all the attention.

Who it is for

People who want an evening that is an event in itself, and who are comfortable being part of the performance rather than watching it. Twelve seats at one table means you are dining with strangers unless you take the whole room.

It is not the place for a quiet dinner, it is not somewhere to take a child, and it is not a restaurant you drop into. Everything is booked well ahead.

Good to know before you book

Check the venue. It is at BLESS Ibiza The Site for 2026, not the Hard Rock. Most of what is written online still says otherwise.

The season is short. It opens on 1 June and runs through the summer only.

Book early. Twelve seats a night across a summer is not many, and the summer weeks go first.

Tell them about dietary requirements when you book, not on the night. The menu is staged in advance and substitutions are not straightforward.
