A Basque pintxos bar near Vara de Rey, where the cold ones are self-serve and charged by the stick.

El Zaguan is on Avinguda Bartomeu de Rosello, just off Vara de Rey in Ibiza Town. It does the Basque thing: a counter covered in pintxos, hundreds of varieties across the week, and hot ones sent out from the kitchen.

Their system catches people out, so it is worth knowing before you walk in.

How it works

The cold pintxos are self-serve from glass cases along the bar: you take what you want onto a plate, and at the end of the evening you are charged by the stick, so keep them.

The hot ones are ordered from the kitchen and brought out.

Monday to Friday from around half past twelve until late, with weekend hours that vary, and it stays open through most of the quiet months. It is not on the official year-round list, so confirm in deep winter.
